How many points do you get for stabbing a monster? A shielded monster?

How many points do you get for stabbing a monster? A shielded monster? +1 and -1 respectively. Target of stab is not mentioned in the Rule and thus doesn't matter.

And I guess monsters always "stab" by default anyway, so no additional effect...
I have to say this is a much more intense sounding stabby rule than last month's.

If you stab plus dispel, does the stab still have its mind-warping effect?

If you stab, and it causes damage. Then the effect is deemed to have taken place. Even when a dispel is in effect.

And you get +1 for stabbing yourself!?

I'm excited to see how many duels end with one Warlock stabbing him/herself to death for points.

If I was stabbed when I cast PSDD at self, does that count as 'suffering from mind effect'? I.e. do I have to stab next turn?

I don't think it counts as 'suffering from mind effect'. In the rules, under Permanency, it says this about charm monster: "Permanency doesn't work with Charm Monster, as that spell has an instant effect rather than actually behaving as an enchantment." Charm monster doesn't behave as an enchantment (or mind spell?), so I'd guess it's not something you can be 'suffering from'.

PSDD is not an enchantment (thus cannot be made permanent), but it is a 'mind spell' (well, because it clashes with other 'mind spells'). I guess I'll wait for xade's reply on if it counts as "suffering" (and I suppose being charmed like a monster is not a pleasant thing ).

I suppose being charmed like a monster is not a pleasant thing ). Uh, being stabbed is unpleasant, too! and what about permanent charm/para/amnesia into >? Isn't it a cheat?

Like Anti-spell, it's not really and enchantment of sorts, and doesn't effect the gestures you can use. Therefore, you're free to stab (and must) with impunity. permacharm onto yourself would be an utter win. The other two wouldn't be much of an advantage.
